Homemade cinnamon rolls: how to make them fluffy and delicious
Ingredients:
- 350 g of 00 flour
- 1 sachet of dry brewer's yeast
- 60 g of sugar
- 2 teaspoons of honey
- 1 whole egg + 1 egg yolk
- 170 g of milk
- 75 g of butter
- 4 g of salt
- grated lemon zest
Filling ingredients:
- 10 g of cinnamon
- 85 g of sugar
- 50 g of melted butter
Glaze ingredients:
- 50 g of icing sugar
- 12 g of water
Directions:
1. First dissolve the yeast in the milk.
2. Pour the mixture into the flour and add the remaining amount of milk and sugar.
3. Combine lemon zest, egg, yolk, butter and salt.
4. Form a homogeneous dough and let it rest for about 2 hours.
5. Then transfer it to the fridge and let it rest overnight.
6. The next day let the dough rest for 2 hours at room temperature.
7. Roll out the dough and stuff it to form the cinnamon.
8. Bake at 170° for 25 minutes.
